Warm Green Bean and Feta Salad from Pinch of Nom might sound like a fairly run of the mill lunch, but don’t dismiss it because of its simplicity. This is a banging low-calorie budget meal, full of flavour with the added kick of the chilli flakes which takes just 10 minutes to make. It’s so yummy.
My only criticism is that the quantities are supposed to stretch to 4 people leaving a very small portion. You’re better off ‘doubling up’ and making this for 2 people instead. The calorie count would still only be 222 per serving.

Ingredients: low-calorie cooking spray, 240g green beans (washed and trimmed), 1 small red onion (peeled, cut in half and sliced), 1 medium red pepper (deseeded and sliced), 1 garlic clove (peeled and finely chopped), pinch of dried chilli flakes (you can use more if you like it spicy), sea salt, ground black pepper, 2 tbsp water, juice of 1 lemon plus extra wedges to serve, 130g reduced-fat feta or Greek-style salad cheese (crumbled)

Method: Spray a wok or frying pan with some low-calorie cooking spray and saute the green beans and onion over a medium heat for 3 minutes. Add the pepper, garlic and chilli flakes. Season with some salt and pepper, stir and cook for another minute.
Add the water, stir and continue cooking for another 5-6 minutes or until the beans are almost cooked (they should still have a bit of bite, but you can cook them for a few more minutes if you prefer them more well done).
Add the lemon juice and cook for another minute. Stir in the crumbled feta, taste to check the seasoning and serve.
