
I’ve loved experimenting with some new turkey recipes over the last six months and Chipotle Turkey Meatballs from Pinch of Nom is right up there with the best. There’s the perfect balance of heat from the chipotle chilli flakes and the smoked paprika which go well with the rich flavour of the passata. Yuummmeeee!!

Recipe: Chipotle Turkey Meatballs

Ingredients:
- Low-calorie cooking spray
- 1 onion (peeled and chopped)
- 1 carrot (peeled and diced)
- 2 garlic cloves (peeled and minced)
- 2 tsp smoked paprika
- ½ tsp chipotle chilli flakes
- 1 x 500g carton passata
- 300ml chicken stock (1 chicken stock cube dissolved in 300ml boiling water)
- 2 tbsp Worcestershire sauce or Henderson’s relish
- Sea salt
- Ground black pepper
- 200g dried spaghetti
For the Meatballs:
- 500g turkey breast mince
- 1 small onion (peeled and thinly chopped)
- ½ tsp chipotle chilli flakes
- 1 tsp dried oregano
- ½ tsp garlic salt
- A good grind of black pepper
- Low calorie cooking spray
Cost per portion: Approx £1.31
Method:
Spray a saucepan with low-calorie cooking spray. Saute the onion and carrot over a medium heat for 4-5 minutes, until the onion begins to soften. Add the garlic, paprika and chipotle chilli flakes and stir well for another minute. Add the passata, stock and Worcestershire sauce and season with salt and pepper as required. Bring to a gentle simmer, then cover and cook for 20 minutes until the carrots are soft.
Meanwhile, place all the ingredients for the meatballs in a bowl and mix well. Divide into 20 even pieces and roll into balls.
Cook the pasta according to the packet instructions.
While the pasta is cooking, spray a frying pan with low-calorie cooking spray and place over a medium-high heat. Add the meatballs and fry on all sides, until sealed and golden. This should take around 10 minutes. Remove the sauce from the heat and blitz with a stick blender, being careful not to splash the hot sauce.
Pour the sauce over the meatballs, stir and return to the heat. Simmer for 5-10 minutes and serve.
