Who would have thought that coronation chicken could be healthy?

Coronation Chicken, if bought from a supermarket, can be really unhealthy. But this alternative sandwich filling suggestion from Two Chubby Cubs is much kinder to your waistline and tastes sensational.

Ingredients:

  • 2 slices of bread
  • 70g diced, cooked, skinless chicken breast
  • 3 tsp reduced-fat mayonnaise
  • 1 tsp mango chutney
  • ¼ tsp of curry powder
  • A small handful of sultantas

Cost per portion: Approx £1.00

Method:

Mix together about 70g diced, cooked, skinless chicken breast with a few teaspoons of reduced-fat mayonnaise. Add a teaspoon of mango chutney and a pinch of curry powder for flavouring, and sprinkle in a few sultanas.
