
I’m short on time today so recipes like Honey and Mustard Salmon from Two Chubby Cubs are perfect when you need to rustle up a meal in minutes with a handful of ingredients. Grab some salmon fillets, coat them in a wholegrain mustard and honey marinade and bang them in the oven. Serve with some greens and/or a small portion of new potatoes or wedges. Job done.

Recipe: Honey and Mustard Salmon

Ingredients:
- 3 tbsp wholegrain mustard
- 4 tsp honey
- 4 cloves of garlic (crushed)
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- ½ tsp black pepper
- 4 salmon fillets
Cost per portion: Approx £1.89 (without potatoes and/or vege)
Method:
Preheat the oven to 180 degrees C fan / gas mark 6.
Mix together the mustard, honey, garlic, paprika, cayenne and black pepper.
Spray an ovenproof dish with a little oil and place the salmon in it.
Using a spatula, spread the honey and mustard mixture over the salmon. Cover with foil and bake in the oven for 15-20 minutes.
Remove the foil and pre-heat the grill to medium-high.
Cook the salmon under the grill for 2-3 minutes.
Serve.
