Ingredients:
- 1 can of tuna in spring water
- Juice of 1 lime
- 2 tbsp light mayonnaise
- 1 tbsp low-fat crème fraiche
- A dash of Tabasco
- 1 tbsp capers (chopped)
- ¼ red pepper (finely chopped)
- 2 spring onions (finely chopped)
- 2 tbsp coriander (finely chopped)
Wraps
- 2 large wraps
- 2 large lettuce leaves (shredded)
- ¼ cucumber (finely sliced lengthways)
- A handful of mint
Cost per portion: Approx £1.36* (based on Tesco’s prices, Feb 2022)
Method:
Drain the tuna and put it in a food processor with the lime juice, mayonnaise and crème fraiche and blitz until smooth. Stir in the rest of ingredients and check for seasoning.
To make wraps, cover each wrap with lettuce, then follow with cucumber. Put the tuna mix on top, then add the mint. Fold up the bottom of each wrap to stop everything falling out, then roll the whole thing up tightly. Cut in half on the diagonal. If you are not using immediately, wrap in foil or baking parchment for later.
