Spicy bean burgers from Justine Pattison were a welcome surprise, and I say this as a hardened meat eater who would have previously dismissed veggie burgers as tasting of ‘cardboard’, or another tired cliché. But let’s be fair, I’ve tasted some frankly awful veggie burgers in other healthy eating recipe books, however despite their appearance Justine’s possessed bags of flavour owing to the chipotle paste, coriander and lime zest.
In fact, these are so good that you don’t need to add extra calories by having these burgers in a bun. Just some nice salad (little gem lettuce leaves and sliced tomatoes) and the accompanying, rather splendid lime and coriander mayo (see below) do the trick. And all for less than 200 calories and under a £1 per serving. Perfect for a ‘meat-free’ Monday or any day, for that matter.
Slow cookers are a handy invention – ideal for slowly cooking casseroles and stews so that you can come home to a hot meal after a long day at work, or if you’ve been out and about. But despite their convenience, I’ve never been a fan of recipes I’ve made in the slow cooker in comparison to cooking them on the hob or in a conventional oven. However, I make an exception when it comes to Mexican Pulled Pork Tacos from Justine Pattison. Yes, you’ve got to marinade the meat for several hours (or preferably overnight) but the end result is absolute worth it.
Slowly cooking a shoulder of pork over an extensive period of time (up to 10 hours if using the LOW setting on a slow cooker) makes the meat a doddle to shed and then you can enjoy it literally melting in your mouth. The image above doesn’t do this meal justice, but try taking a photo of a taco filling when you’re starving, it’s never going to turn out well! :).
Pork shoulder is dirt cheap and the calorie count for this recipe is surprisingly low, BUT that’s dependent on you cutting off the rind and fat before you cook it ;-). Home-made slaw is so much better than the pre-prepped supermarket equivalents, or serve with some gem lettuce and sour cream if you can’t be arsed / are pushed for time.
You may notice a few more Mexican recipes finding their way onto this blog in the coming days. That’s because I was supposed to go on holiday to Cancun this summer before the world imploded due to Covid. In an attempt to cushion the blow, I thought it would be quirky to have a complete week dedicated to Mexican food. Well, it seemed a good idea at the time….
Kicking the week off was Mexican Breakfast from Justine Pattison. I’m not entirely sure what makes this ‘Mexican’, surely it needs more than the introduction of a tortilla wrap (which I didn’t bother with)? But anyway, for less than £1 per portion this was a decent brunch fix, although not as authentic as all-day Mexican breakfast from Jamie Oliver, which in truth I didn’t enjoy as much.
If you like the concept of cooking eggs in a pan, then personally menemen (a Turkish recipe) from the Hairy Dieters gets my vote all-day long.
For all the frustration and worry caused by going into lockdown, I never understood why some people made such a fuss about no longer being able to visit their favourite fast food joints. But it prompted some to discover how easily they could recreate their favourite convenience meals at home, and also realise how much these joints were having their pants down in terms of what they were being charged for the quality of food being served – not to mention the higher calories!
Piri Piri Chicken from Justine Pattison is a lighter take on a Nando’s institution and it tastes damn good. But you must remember to follow the golden rules to create the authentic piri piri taste. Firstly, you must marinade the chicken for at least 4 hours but preferably overnight to allow for the flavours to intensify. Secondly, and above all, make sure you use proper hot chillies like red bird’s eye instead of regular ones otherwise your food will be lacking the heat you crave.
This is great with a big side salad or some naughty chippies / potato wedges on the side.
Food snobs may disagree but who doesn’t love a jacket potato? Justine Pattison’s Tuna and Sweetcorn Cheat’s Jackets uses new potatoes instead of proper jackets, but it still tastes great and is ready in half the time. Such a simple and cheap meal to make and only 206 calories per serving.
Buffalo Wings with Blue Cheese Dip is a cheap and very cheerful American bar snack from Justine Pattison, which creates the sticky, smoky flavours you know and love for a fraction of the calories (under 400 in this case, with dip).
You can save yourself some time (and hassle) by not attempting to cut each wing into two meaty pieces. Unless you’ve got a really sharp knife, you might find this tricky, so why not just bake the wings hole and allocate 200g to each person, per serving. I enjoyed these wings with a few naughty chippies and the blue cheese dip. I just forgot to include it when taking the photo, but I’d definitely recommend it with some celery sticks to accompany.
I’ve never been to Sweden, or to Ikea for that matter, so I can’t vouch for the authenticity of Justine Pattison’s Swedish Meatballs in Gravy. But meatballs can be quite fatty and Justine’s dish comes in at a much more diet friendly 324 calories per serving. So with a small portion of mash you’re looking at about 500 calories all in. Impressive, although I wish healthy eating cookbooks would factor in the extra calorie counts to include accompaniments – you’re hardly going to scoff these meatballs on their own!
This isn’t a quick meal to prepare, so I recommend making this on a weekend. Despite the level of effort involved, the end result was enjoyable, with the ‘gravy’ particularly flavoursome. My only gripe was that it tasted too much of dill, which is a strong tasting herb even if you’re only using 15g of it. I also should have reduced the gravy down a little as the sauce was a bit runny.
If you’re buying bigger packs of beef and pork mince, you will have some produce leftover. I’ll give you some ideas as to what other meals you can make on this blog in the coming weeks. Stay tuned.
Smoky Sausage and Beans from Justine Pattison’s Without the Calories – Comfort Food is indeed the epitome of comfort food – rich in flavour, so easy to put together in one pan and cheap to make. The ‘smoky’ flavour comes from the smoked paprika, cumin and coriander which I tend to chuck into the pan with reckless abandon. But remember, there are no calories in spices!
My teenage lad isn’t a fan of sausages unless the skins are removed and shaped into patties. But he much prefers the daintier chipolatas, which suits me fine because they are better for your waistline. This filling meal comes in at 412 calories per serving is perfect for a weeknight evening which is best enjoyed when the weather is cold or crappy. Love chipolatas? Then check out sausage and apple bake which is another brilliantly comforting recipe.
Cobb Salad from Justine Pattison is an amazing, belly-busting US salad which will provide a filling lunch as well as a main evening meal. It’s great with a drizzle of balsamic vinegar, or a blue cheese dressing which you can make in a couple of minutes using light mayo, buttermilk or fat-free natural yoghurt, white wine vinegar, Roquefort cheese (or any blue cheese will do) and a dash of salt and pepper.
Struggling to remember the ingredients? As Justine says, just think ‘Eat Cobb’ – egg, avocado, tomato, chicken, onion, bacon and beetroot. My mouth is watering just typing this! One of the most satisfying, healthy salads you’re likely to have.
I love the concept behind Justine Pattison’s One-Pan Cooked Breakfast. A traditional ‘fry-up’, made healthier by cooking the ingredients in the oven, for less than a quid per portion with minimal washing up.
But in reality this recipe is a bit of a faff to make, and I nearly made Will late for school and me late for work by not reading the cooking method properly. When I put food in the oven I don’t want to worry about it until it’s ready to bring out. However, my patience was tested with this meal because it involves about 5 different stages – stir this, turn that, do the hokey cokey and you turn around….
Oh dear, where do I begin? Creamy Scallops with Bacon from Justine Pattison turned into a ‘date night’ disaster for me recently. The first red flag was that my brilliant local fishmonger was temporarily closed due to COVID-19, prompting a rush of blood as I naively ordered frozen scallops from a supermarket. The difference ibetween fresh, quality scallops and frozen supermarket ones is night and day.
My second, even bigger faux pas, was buying a larger cauliflower to make the creamy puree. In doing so, the sauce completely overwhelmed any chance of tasting, let alone finding, the bacon and the scallops. But they were in there, even if the photo suggests I’m lieing.
When I’ve calmed down I’ll give this another bash using a much smaller cauli (500-700g only). But if this was a ‘first date’ I’m not sure Ann-Marie would have been inclined to grant me a second one ha ha!
Although I don’t mind washing up (it keeps my hands soft!), I do get irritable when having to use lots of pots and pans at the same time in the kitchen, particularly when I’m unfamiliar with a recipe. So the concept of Justine Pattison’s ‘Without the Calories – easy one pot’ book was appealing.
Chicken and Ham Wok Lasagne caught my eye within it because I was intrigued as to how realistic it could be to create a ‘lasagne’ using one pan. It was refreshingly simple, even if there’s a few ingredients to prep and get out on the working top before you start cooking. But above all this recipe tastes great too and while it might not be conventional, it’s effective when you can’t be arsed to make a proper lasagne. Actually, I can never be arsed to make a proper lasagne.
Hot as a fever, rattle of bones. I could just taste it, taste it. Yooooouuuuu. Your Spaghetti is on FIRE. Ok, so I doubt Kings of Leon will be adapting the lyrics of ‘Sex on Fire’, but I did chuckle to myself while prepping Spaghetti on Fire from Justine Pattison.
This is a belter of a pasta dish, packed with good stuff (vege), and full of flavour from the smoked bacon and chilli flakes. Adding Parmesan and basil leaves is optional but I’d wholeheartedly recommend doing so toenhance the taste. This frugal recipe is right up there with my favourite pasta dishes, but numero uno for me remains Pasta Puttanesca. Which one is yours?
At times, lockdown has sent us all a little crazy. Ann-Marie’s moment of madness came when she decided to order a 25kg bag of potatoes from a farm store to ensure we didn’t run out. Now that’s a serious amount of carbs right there! Undeterred, I began furiously fanning my recipe books for meals with potatoes and came across Beef Massaman Curry from Justine Pattison’s excellent ‘Takeaway Favourites’ book.
The recipe requires 500g of potatoes, not 25kg, but hey it’s a start. But what about the taste? Pretty good actually, although I was unable to get my hands on any kaffir lime leaves so swapped in some lime zest. I also didn’t bother with the chilli peanuts suggestion – in hindsight a mistake as I definitely would have preferred more heat in this.
But with all of the proper ingredients I’ll definitely make this Thai curry again as I’m in no danger of running out of spuds! My son Will loves pasta but supermarket varieties with sauce can come in at over 500 calories for just half a pack. So, I embarked on a mission to find healthier, yummier alternatives and Pea and Prosciutto Pasta from Justine Pattison has become his favourite.
The calorie count for this recipe is 329 per serving, however the addition of the butter and a splash of single cream still makes it feel sufficiently naughty and Will regards this as a proper treat. Turkey Lettuce Wraps from Justine Pattison reminds me of going to a Chinese restaurant with my parents as a kid. I loved spare ribs, prawn toast and seaweed but they took a back seat when I discovered mince meat wrapped in lettuce leaves – it was even yummier with the added advantage that it didn’t leave me with barbecue sauce smeared all over my chops, fingers and shirt.
As a replica dish, this recipe is superb and only 158 calories per serving. So quick, so easy and so scrumptious it has been one of my favourite lunches of lockdown. I previously believed that parsnips and carrots only belong with a Sunday roast. But after sampling Justine Pattison’s delightful Couscous with Roasted Roots, Honey and Goat’s Cheese salad that opinion has firmly been revised.
Drizzling olive oil and honey over the veg makes them taste divine, and you get extra flavour from the chicken or vegetable stock and the chilli flakes, plus a contrast in texture from the beetroot and goat’s cheese. This one-pot dish really takes you on a culinary journey and the end result is a colourful and filling plate of food that tastes superb for both vegetarians and obstinate meat eaters. Creamy pork, apples and cabbage is a sumptuous one-pot dish from Justine Pattison that is packed with flavour but for only 346 calories per serving. The ingredients that make up the sauce just beg to be mopped up by the meat, potatoes and veg.
Although some people might turn their noses up at them, canned potatoes are an excellent and budget-friendly store cupboard stand-by. Savoy cabbage also lasts a number of days in the fridge. If you’ve got any leftover, give Hotdog Hotpot a go in which you can also use another valuable store cupboard stand-by in tinned or jarred frankfurters to make another cheap and nourishing meal. If you’re looking to introduce more fish into your diet, Pan-fried Cod with Asian Dressing from Justine Pattison is an excellent place to start. At only 199 calories per serving, it’s so healthy and this meal is a cinch to knock together.
The Thai dressing provides some welcome punch when poured over the fish and vegetables and this recipe is perfect for spring and summer midweek evenings, when you want to rustle something up in 10 minutes and then chill.
