Spicy Black Beans with Feta and Avocado


I wonder what English street food would be? Can of lager and a bag of crisps?

Spicy Black Beans with Feta and Avocado is Gordon Ramsay’s take on Mexican street food. He recommends that you serve this with ‘tostadas’ (see below), which is tortilla wraps shallow-fried in vegetable oil. I decided I was going to be good and refrained, which in hindsight was probably a mistake as I felt the recipe needed something else to bring it all together. Not that I’d tell Gordon this to his face, otherwise it would be a recipe for disaster!

Although more graft and ingredients are involved, I personally prefer veggie tacos from the Hairy Dieters which also uses black beans.

Spicy Mexican Beef


Use tinned chopped tomatoes and frozen regular green beans to make this easier

Spicy Mexican Beef from Two Chubby Cubs rounded off my week of purely Mexican-based dishes with a bit of whimper, rather than the bang I was hoping for. As a recipe it’s not bad and requires minimal effort, but even with the addition of the chipotle paste and chillies it seemed to be lacking something.

I’m not a huge advocate of casserole beef, no matter how long you cook it for, so you may enjoy this more than I did. You can serve this with a small portion of rice, but don’t forget to account for the extra calories and be mindful that each serving on its own is 499 cals.

My favourite slow-cooked beef recipe so far this year has been beef massaman curry which I’d recommend. Wondering what to do with any remaining chipotle paste? Try making speedy turkey chilli and spicy sweetcorn soup which are excellent.

Mexican Caesar Salad


This is a classy salad, bursting with fresh ingredients

Mexican Caesar Salad from Jamie Oliver’s ‘Save with Jamie’ book is a sumptuous treat for lunch or a light evening meal which has got a little bit of everything in it. Containing 17 ingredients and at over £2 a head I’m not sure how this can be classed as a budget meal though, Jamie.

But aside from the cost, this salad tastes great and will satisfy your hunger cravings that you’ll work up whilst prepping it! If you want a slightly cheaper and lighter version, check out chicken caesar salad from the Hairy Dieters. Or, if neither of these appeal, then have a gander at cobb salad from Justine Pattison which has become a favourite of mine.

Tex Mex Toad-in-the-Hole


What would Speedy Gonzalez make of this?

Tex Mex Toad-in-the-Hole from Justine Pattison is about as Mexican as me growing a tash and donning a sombrero. But let’s just go with it because it’s a quirky little recipe and a funky twist on the traditional toad-in-the-hole.

If you can’t get hold of spicy pork sausages (and I couldn’t find any supermarkets that stock them), improvise by lobbing in a generous sprinkling of chilli flakes over regular sausages in your roasting tin. And don’t be tempted to open your oven door once the tin is in there otherwise your batter won’t rise!

Smoky Steak Fajitas


You don’t need to buy expensive steak to make this work – frying steak will do the job

Smoky Steak Fajitas from Justine Pattison is a good choice for a fast midweek meal, or especially on a Friday evening after a week at work when you don’t have the energy to cook something which requires any effort. Key to getting this recipe right is heat. Make sure your griddle pan is piping hot before cooking your steak, and it only needs about 1 ½ minutes on each side.

Again, with heat in mind, make sure you cover the cooked steak with a piece of foil, wrapped in a clean towel to keep it warm while you stir-fry the peppers and spring onions. Finally, don’t forget to warm your tortillas through – cold tortillas are yukky!!

Personally, I would have been a bit more brazen with this recipe and chucked in some jalapenos and a spicier variety of salsa, but it’s easy to switch a few ingredients around to meet your preferences! Quesadilla with Barbecue Potato Wedges


You’ve got to try the barbecue potato wedges – simply scrummy!

My Mexican food week continued with Quesadilla from Pinch of Nom, accompanied by Nom’s Barbecue Potato Wedges which were totally yummy! Getting my teenage son to have vegetarian-based meals can be a challenge, but fortunately he loves pulses and tortilla wraps so convincing him to tuck into this was refreshingly easy.

This simple recipe is going to become a regular in my household and the BBQ wedges are a brilliant dance partner for less than 400 calories in total. Do take care when flipping over your quesadilla to finish them off. Remember, slow and steady wins the race and you don’t have to try a Jamie Oliver style ‘toss’ to impress anyone. Food on your plate is always preferable to food on the floor ;-).

Spicy Bean Burgers with Lime and Coriander Mayo


You don’t need a bun for these, but don’t forget the lime and coriander mayo!

Spicy bean burgers from Justine Pattison were a welcome surprise, and I say this as a hardened meat eater who would have previously dismissed veggie burgers as tasting of ‘cardboard’, or another tired cliché. But let’s be fair, I’ve tasted some frankly awful veggie burgers in other healthy eating recipe books, however despite their appearance Justine’s possessed bags of flavour owing to the chipotle paste, coriander and lime zest.

In fact, these are so good that you don’t need to add extra calories by having these burgers in a bun. Just some nice salad (little gem lettuce leaves and sliced tomatoes) and the accompanying, rather splendid lime and coriander mayo (see below) do the trick. And all for less than 200 calories and under a £1 per serving. Perfect for a ‘meat-free’ Monday or any day, for that matter.

Mexican Pulled Pork Tacos


Stuff with little gem lettuce, home-made coleslaw, soured cream, jalapenos etc etc

Slow cookers are a handy invention – ideal for slowly cooking casseroles and stews so that you can come home to a hot meal after a long day at work, or if you’ve been out and about. But despite their convenience, I’ve never been a fan of recipes I’ve made in the slow cooker in comparison to cooking them on the hob or in a conventional oven. However, I make an exception when it comes to Mexican Pulled Pork Tacos from Justine Pattison. Yes, you’ve got to marinade the meat for several hours (or preferably overnight) but the end result is absolute worth it.

Slowly cooking a shoulder of pork over an extensive period of time (up to 10 hours if using the LOW setting on a slow cooker) makes the meat a doddle to shed and then you can enjoy it literally melting in your mouth. The image above doesn’t do this meal justice, but try taking a photo of a taco filling when you’re starving, it’s never going to turn out well! :).

Pork shoulder is dirt cheap and the calorie count for this recipe is surprisingly low, BUT that’s dependent on you cutting off the rind and fat before you cook it ;-). Home-made slaw is so much better than the pre-prepped supermarket equivalents, or serve with some gem lettuce and sour cream if you can’t be arsed / are pushed for time.

Mexican Breakfast


Answers on a postcard – what makes this dish ‘Mexican’?

You may notice a few more Mexican recipes finding their way onto this blog in the coming days. That’s because I was supposed to go on holiday to Cancun this summer before the world imploded due to Covid. In an attempt to cushion the blow, I thought it would be quirky to have a complete week dedicated to Mexican food. Well, it seemed a good idea at the time….

Kicking the week off was Mexican Breakfast from Justine Pattison. I’m not entirely sure what makes this ‘Mexican’, surely it needs more than the introduction of a tortilla wrap (which I didn’t bother with)? But anyway, for less than £1 per portion this was a decent brunch fix, although not as authentic as all-day Mexican breakfast from Jamie Oliver, which in truth I didn’t enjoy as much.

If you like the concept of cooking eggs in a pan, then personally menemen (a Turkish recipe) from the Hairy Dieters gets my vote all-day long.

All-Day Mexican Breakfast


If you like neat and tidy meals, this probably isn’t for you

True but pointless story. In my younger student days, I was once removed from a public house establishment over a row about an ‘all-day breakfast’. It was 8pm, I’d had a couple of beverages and fancied a good old-fashioned ‘fry-up’. “We stopped selling the all-day breakfast sir at 12pm,” said a patronising waiter. He may not have been, I was pissed. “An all-day breakfast should be all day, it’s 8 o’clock, I want an all-day breakfast,” I insisted. It didn’t end well.

Anyway, I digress, but the point of this pointless story is that you can enjoy this All-Day Mexican Breakfast from Jamie Oliver whenever you like, and you only need 5 base ingredients to rustle it up. Eggs and avocado together can be a messy job, as the photo below indicates. My wife likes soft eggs, I like hard, as I was making this I got my wish but I do think this recipe lends itself better to soft / medium cooked eggs. We opted for 2 chillies which made this really hot! So, if you’re not a heat freak, maybe opt for 1 chilli instead.

Veggie Tacos


This tastes great, but you will fart afterwards!

Veggie Tacos from the Hairy Dieters is an absolute feast that even hardened meat eaters should try. My teenage son still thinks vegetables are from the devil, but thankfully loves all types of beans so he’ll happily demolish these tacos without protest. There is a fair amount of prep involved beforehand, but you should have some leftovers for the next day as this will serve 4 generously. And if it doesn’t, what are you doing? You’re supposed to be on a diet ;-).

Wondering what to do with the leftover produce? Use the kale to make cajun prawn and kale salad or scrambled cajun eggs with spinach and eggs. For butternut squash, try butternut squash pilaf, beef kofta curry (gorgeous!), curried butternut squash and apple soup or home-made butternut squash tortellini. Right, that should keep you busy! Enchiladas – Tex-Mex treat on a diet

With my summer holiday to Mexico looking increasingly unlikely, I decided to console myself by making Enchiladas from the Hairy Dieters. Did it cheer me up during lockdown? Well, no, not really, but did it taste lovely? Hell yes.

In essence, this is an adapted chilli con carne recipe, pimped up by placing it in tortillas which you can top with whatever goodies you like, within reason, as we’re supposedly watching our calories right now (wahahaha). I’m a bit heavy-handed with salsa and jalapenos, but you can top yours with crème fraiche, guacamole and/or sour cream. Fill your boots, I mean tortilla. Justine Pattison’s Tortilla Chilli Pie is a quirky adaption on a traditional chilli con carne recipe . The addition of the tortilla chips was enough to whet the appetite of my picky teenage son and the jalapenos went down well with my wife who is a real heat freak. Result! :-).

Fast Chicken Fajitas – TGI Fridays on a diet


Chicken fajitas

TGI Fridays was a regular destination for me when I lived in Sheffield, but as much as I loved the food it didn’t love my waistline or wallet! Fast Chicken Fajitas from the Hairy Dieters is about as close as I can get to re-creating the TGI effect when watching my weight and can be rustled up for around £2 per person.

This recipe is perfect for a Friday night when you’re fancying a ‘treat’ without resorting to a takeaway and only takes about 10 minutes to cook. I recommend prepping the ingredients in advance and then you can literally throw everything into the pan.

Chilli con carne – healthy pub comfort food


Chilli con carne

Who doesn’t love a chilli as the evenings start to draw in? Chilli Con Carne from the Hairy Dieters’ first book is tasty and a doddle to throw together. The high number of required ingredients may be off-putting to some, particularly if you’re not used to cooking from scratch, however if you’re committed to eating healthy, fresh food then most of the items will become store-cupboard staples which you’ll regularly use in other recipes.

Do be mindful that the calorie count is 302 per serving WITHOUT rice, which can easily add another 100-150 calories depending on how generous you are. Personally, about three tablespoons of rice is sufficient for me as I’m not a big fan. I’m also happy to just have the chilli with a side salad and a low-fat dressing.

The recipe does serve five at a push, with your chosen accompaniment. For me, it made x2 chilli and small portions of rice, x2 jacket potatoes with filling and leftover chilli with a side salad for lunch.
